Pork Preparation

    Prepare the Pork Chops

    Season the pork chops with salt and black pepper on both sides. Dredge each chop in flour, shaking off excess. Dip them in beaten eggs, then coat with bread crumbs, pressing to adhere.

    Fry the Pork Chops

    In a large skillet, heat olive oil over medium-high heat. Once hot, add the breaded pork chops and fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and let drain on paper towels.

    Sauté the Greens

    In a separate pot, bring water to a boil. Blanch the broccoli rabe for 2-3 minutes until tender, then drain and set aside. In a skillet, heat olive oil over medium heat, add minced garlic and sauté until fragrant. Add spinach and blanched broccoli rabe, cooking until wilted. Season with salt and pepper to taste.

    Make the Red Sauce

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until golden. Pour in the crushed tomatoes, add salt, black pepper, and oregano. Simmer for about 15 minutes, stirring occasionally.

Assembly

    Plate the Dish

    On a serving plate, place a pork chop, spoon over the red sauce, and sprinkle with pecorino cheese. Serve the sautéed greens on the side.
