    Prepare the Garlic Oil

    In a small saucepan, combine 1 cup of olive oil with 4 crushed garlic cloves. Heat over low heat for about 15 minutes, allowing the garlic to infuse the oil. Be careful not to let the garlic burn. Once done, remove from heat and let it cool. Strain the oil into a bowl, discarding the garlic solids.

    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips (about 1/4 inch thick) to resemble fries. Place the cut potatoes into a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Bake the Fries

    Preheat your oven to 425°F (220°C). Drain the soaked potatoes and pat them dry with a kitchen towel. In a large bowl, toss the dried potato strips with 2 tablespoons of olive oil and 1 teaspoon of salt until evenly coated. Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until golden brown and crispy, flipping halfway through.

    Add Garlic Oil and Parmesan

    Once the fries are finished baking, remove them from the oven. Drizzle the prepared garlic oil over the hot fries and toss to coat evenly. Sprinkle the grated Parmesan cheese over the fries, followed by the chopped parsley. Serve immediately.
