Braised Pork

    Sear the Pork

    In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Season the pork shoulder with salt and black pepper. Once the oil is hot, add the pork and sear on all sides until golden brown, about 5-7 minutes. Remove the pork from the pot and set aside.

    Sauté Onions and Garlic

    In the same pot, add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

    Braise the Pork

    Return the seared pork to the pot. Add the chicken broth and bay leaves. Bring to a simmer, then cover and reduce the heat to low. Cook for about 2-3 hours or until the pork is tender and easily shredded.

Pasta

    Cook the Mafaldine

    While the pork is braising, bring a large pot of salted water to a boil. Add the mafaldine pasta and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

Broccoli Rabe

    Sauté the Broccoli Rabe

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced garlic and red pepper flakes, sautéing for about 1 minute until fragrant. Add the trimmed broccoli rabe and sauté for about 5-7 minutes until tender and bright green. If necessary, add a splash of the reserved pasta water to help cook the greens.

Combine and Serve

    Combine Ingredients

    Once the pork is done braising, shred it using two forks and return it to the pot. Add the cooked mafaldine pasta to the pot, tossing everything together to combine. If the mixture seems dry, add some reserved pasta water to achieve the desired consistency.

    Plating

    Serve the mafaldine with the braised pork mixture topped with the sautéed broccoli rabe. Drizzle with additional olive oil if desired, and serve warm.
