Method

Preparation

  1. 1

    Prepare the Base

In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is warm but not boiling.

  2. 2

Whisk Together Sugar and Egg Yolks

In a separate bowl, whisk together the granulated sugar and egg yolks until the mixture is pale and creamy.

  3. 3

    Combine Mixtures

Slowly pour the warm milk and cream mixture into the bowl with the sugar and egg yolks, whisking continuously to temper the eggs.

  4. 4

    Cook the Custard

Return the mixture to the saucepan and cook over medium heat, stirring constantly until it thickens enough to coat the back of a spoon.

  5. 5

    Add Vanilla

Remove from heat and stir in the vanilla extract. Allow the custard to cool to room temperature.

Flavoring and Churning

  1. 6

    Add Flavorings

Once the custard is cool, mix in the chocolate chips and cocoa powder until well incorporated.

  2. 7

    Chill the Mixture

Cover the mixture with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.

  3. 8

    Churn the Gelato

Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

  4. 9

    Freeze the Gelato

Transfer the gelato to an airtight container and freeze for at least 2 hours before serving to allow it to firm up.
