Fried Mozzarella

    Prepare the mozzarella

    Cut the fresh mozzarella cheese into 1-inch cubes. Pat them dry with paper towels to remove excess moisture.

    Set up the breading station

    In three separate shallow dishes, place the flour, beaten eggs, and breadcrumbs. Season the flour with salt and black pepper.

    Bread the mozzarella

    Dredge each mozzarella cube in flour, shaking off the excess. Then dip it into the beaten eggs, ensuring it is fully coated. Finally, roll it in the breadcrumbs, pressing gently to adhere.

    Heat the oil

    In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the mozzarella

    Carefully add the breaded mozzarella cubes to the hot oil in batches, avoiding overcrowding. Fry for about 2-3 minutes or until golden brown, turning occasionally.

    Drain and serve

    Remove the fried mozzarella from the oil and place them on a plate lined with paper towels to drain excess oil. Serve warm with tomato sauce.

Tomato Sauce

    Heat the olive oil

    In a medium saucepan, heat the olive oil over medium heat.

    Sauté garlic

    Add minced garlic cloves to the heated oil and sauté for 1-2 minutes until fragrant but not browned.

    Add tomatoes and seasonings

    Stir in the canned crushed tomatoes, dried oregano, salt, black pepper, and sugar. Mix well.

    Simmer the sauce

    Bring the sauce to a simmer, then reduce the heat to low. Let it cook for about 15-20 minutes, stirring occasionally.

    Finish with basil

    Just before serving, stir in the fresh basil leaves and let them wilt in the sauce.
