Preparation of Salad Ingredients

Chop the Romaine
Rinse the romaine lettuce under cold water and chop it into bite-sized pieces. Place it in a large mixing bowl.

Slice the salami and pepperoni into thin strips. Cut the provolone cheese into small cubes. Add the meats and cheese to the mixing bowl.
Making the Dressing

In a small bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, salt, and black pepper until the mixture is well combined and emulsified.
Assembly
