Method
Preparing the Chicken
- 1
Season the Chicken
Start by seasoning both sides of the chicken breasts with salt and black pepper.
- 2
Bread the Chicken
Set up a breading station: place the flour in one plate, beaten eggs in another, and breadcrumbs in a third. Dredge each chicken breast in flour, shaking off the excess, then dip into the eggs, and finally coat with breadcrumbs.
- 3
Fry the Chicken
In a large skillet, heat the olive oil over medium heat. Once hot, add the breaded chicken breasts in batches, cooking for 4-5 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
Assembling the Dish
- 4
Preheat the Oven
Preheat your oven to 375°F (190°C).
- 5
Layer the Chicken
In a baking dish, spread a thin layer of marinara sauce on the bottom. Place the fried chicken breasts on top of the sauce.
- 6
Add Sauce and Cheese
Spoon additional marinara sauce over each chicken breast, then sprinkle with mozzarella and parmesan cheese.
- 7
Bake the Chicken
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Cooking the Pasta
- 8
Boil the Spaghetti
While the chicken is baking, bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
- 9
Drain and Serve
Once cooked, drain the spaghetti and serve alongside or under the chicken parmigiana.
