    Prepare the Onion

    Slice the large onion into thin rings.

    Prepare the Cheese

    Slice or shred the cooper sharp cheese into thin pieces.

    Prepare the Meat

    If not already shaved, slice the ribeye steak thinly against the grain.

Cooking

    Caramelize the Onion

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions, sprinkle with salt, and cook, stirring occasionally, until the onions are golden brown and caramelized, about 15-20 minutes.

    Cook the Ribeye

    In the same skillet, add another tablespoon of olive oil. Increase the heat to medium-high. Add the shaved ribeye steak, seasoning with salt and black pepper. Cook for about 3-5 minutes, stirring frequently until the meat is cooked through.

    Combine the Ingredients

    Once the ribeye is cooked, reduce the heat to low and add the caramelized onions back to the skillet. Mix well to combine and then add the cooper sharp cheese on top. Cover the skillet for a few minutes until the cheese melts.

Assembly

    Prepare the Rolls

    Slice the sesame rolls in half horizontally. Optionally, you can toast them lightly in the skillet.

    Assemble the Cheesesteak

    Spoon the meat and cheese mixture onto the bottom half of each sesame roll. Place the top half of the roll over the filling.
