Cook the Tortellini
Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente, usually about 3-5 minutes. Drain and set aside.

Sauté Aromatics
In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1-2 minutes until fragrant.

Add Spices and Tomatoes
Stir in the calabrian chili paste, followed by the canned crushed tomatoes. Bring to a simmer and cook for about 5 minutes.

Incorporate Cream and Basil
Lower the heat and stir in the heavy cream and chopped basil. Cook for another 2-3 minutes, allowing the sauce to thicken slightly. Season with salt and black pepper to taste.

Combine Tortellini and Sauce
Add the cooked tortellini to the sauce, gently tossing to coat the pasta evenly with the creamy tomato sauce.

Divide the tortellini among plates or bowls. Top with generous dollops of stracciatella cheese and a sprinkle of grated pecorino cheese.
