Method
Preparation
- 1
Cook the Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of pasta water, then drain the pasta.
- 2
Prepare the Bacon
While the pasta is cooking, cut the bacon into small pieces. In a large skillet over medium heat, cook the bacon until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and let it drain on paper towels, leaving the bacon fat in the skillet.
Combining Ingredients
- 3
Add Peas
In the same skillet with the bacon fat, add the peas and cook for 2-3 minutes until heated through. Remove from heat.
- 4
Mix Sauce
In a mixing bowl, whisk together the egg yolks, grated parmigiano cheese, and black pepper until well combined.
- 5
Combine Pasta and Sauce
Add the drained spaghetti to the skillet with peas and bacon, tossing to combine. Quickly pour in the egg mixture, stirring vigorously to coat the pasta and create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Final Touches
Taste and add salt if needed, then serve immediately. Optionally, top with extra grated parmigiano cheese and freshly cracked black pepper.
