Method
Dressing Preparation
- 1
Blend the Ingredients
In a blender or food processor, add the silken tofu, lemon juice, Dijon mustard, Worcestershire sauce, garlic powder, nutritional yeast, olive oil, salt, and black pepper.
- 2
Process Until Smooth
Blend the mixture on high until it is completely smooth and creamy. If the dressing is too thick, you can add a little water to reach your desired consistency.
- 3
Taste and Adjust
Taste the dressing and adjust seasoning if necessary. Add more lemon juice for acidity, salt for flavor, or nutritional yeast for a cheesier flavor.
Crouton Preparation
- 4
Preheat the Oven
Preheat your oven to 375°F (190°C).
- 5
Prepare the Bread
Cut the bread into small cubes, roughly 1 inch in size.
- 6
Season the Croutons
In a large bowl, toss the bread cubes with olive oil, garlic powder, Parmesan cheese, salt, and black pepper until the bread is evenly coated.
- 7
Bake the Croutons
Spread the seasoned bread cubes evenly on a baking sheet and bake for 10-15 minutes, or until golden brown and crunchy. Stir halfway through for even cooking.
- 8
Cool and Store
Remove from the oven and allow to cool. Store any leftovers in an airtight container.
