Preheat the Oven
Preheat your oven to 450°F (230°C).

Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.

Cut in Butter
Add the cold unsalted butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.

Add Buttermilk and Honey
Pour in the buttermilk and honey. Stir gently with a fork until the dough just comes together. Be careful not to overmix.

Shape the Dough
Turn the dough out onto a lightly floured surface. Pat it into a 1-inch thick rectangle. Fold the dough over itself 2-3 times, gently pressing down to help the layers form.

Cut the Biscuits
Using a floured biscuit cutter or a glass, cut out biscuits from the dough. Place them on a baking sheet lined with parchment paper.

Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown on top.

Remove the biscuits from the oven and let them cool slightly before serving.

In a small bowl, combine the softened unsalted butter and honey. Mix well until smooth and creamy.
