Chicken Cutlet

Prepare the Chicken
Preheat your oven to 400°F (200°C). Place chicken breasts between two sheets of plastic wrap and pound them to an even thickness. Season with salt and black pepper.

Cook the Chicken
Heat olive oil in a large skillet over medium heat. Add the breaded chicken cutlets and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and keep warm.

Cook the Eggs
In a non-stick skillet, melt butter over medium heat. Crack the eggs into the skillet and cook until the whites are set and the yolks are still runny, or to your desired doneness. Season with salt and black pepper.

Sundried Tomato Aioli

Make the Aioli
In a blender, combine sundried tomatoes, mayonnaise, garlic, and lemon juice. Blend until smooth. Season with salt to taste.
Tater Tots

Prepare tater tots according to package instructions, usually by baking at 425°F (220°C) for 20-25 minutes until crispy.
