    Cook the Orzo

    In a large pot, bring salted water to a boil. Add orzo pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Shallots and Spinach

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add minced shallots and sauté until translucent, about 2-3 minutes. Add baby spinach and sun-dried tomatoes and sauté until spinach is wilted, about 2-3 minutes.

    Combine Ingredients

    Add the cooked orzo and heavy cream to the skillet with the spinach mixture. Stir to combine and season with salt and pepper to taste. Remove from heat.

Baking the Salmon

    Prepare the Salmon

    Preheat the oven to 375°F (190°C). Place the salmon fillets on a baking sheet lined with parchment paper. Season with salt and pepper.

    Make the Herbed Breadcrumb Topping

    In a small bowl, combine bread crumbs, chopped parsley, dried oregano, grated Parmesan cheese, and remaining tablespoon of olive oil. Mix well until the breadcrumbs are coated.

    Assemble the Dish

    Top each salmon fillet with a generous portion of the herbed breadcrumb mixture.

    Bake the Salmon

    Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
