Preparing the Filling

    Roasting the Garlic

    Preheat your oven to 400°F (200°C). Cut the top off the head of garlic to expose the cloves. Drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft. Let cool, then squeeze out the cloves into a bowl.

    Mixing the Filling

    In a large bowl, combine ricotta cheese, roasted garlic, shredded mozzarella, grated Parmesan, egg, salt, black pepper, and chopped parsley. Mix until well combined.

Making the Tomato Sauce

    Sautéing the Aromatics

    In a saucepan, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for another minute.

    Cooking the Sauce

    Add the crushed tomatoes, dried oregano, dried basil, salt, and black pepper to the pan. Bring to a simmer and let cook for 15-20 minutes, stirring occasionally.

Cooking the Manicotti

    Boiling the Pasta

    In a large pot, bring water to a boil. Add the manicotti pasta and cook for 8-10 minutes until al dente. Drain and let cool slightly.

    Filling the Pasta

    Carefully fill each manicotti shell with the ricotta filling using a spoon or piping bag.

    Assembling the Dish

    Spread a thin layer of tomato sauce on the bottom of a baking dish. Arrange the filled manicotti on top, then cover with remaining tomato sauce. Sprinkle with extra mozzarella if desired.

    Baking

    Preheat the oven to 350°F (175°C). Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for another 15 minutes until bubbly and golden.
