Muddle lime leaf
In a cocktail shaker, place the torn lime leaf. Gently muddle the leaf just once or twice to release aromatic oils — avoid shredding it completely to prevent bitterness.
Combine ingredients
To the shaker add 2 oz The Botanist Gin, 0.75 oz yuzu juice, 0.25 oz fresh lime juice, 0.5 tsp simple syrup, and 0.5 oz egg white (if using).
Dry shake
Seal the shaker and shake vigorously without ice for 10–15 seconds to emulsify the egg white and incorporate the lime leaf oils.
Wet shake
Add ice (about 1 cup) to the shaker and shake hard for 12–16 seconds until the outside of the shaker feels very cold and the mixture is well chilled.
Double strain
Discard ice or water from the chilled serving glass. Fine-strain the cocktail into the chilled coupe or Nick & Nora using a Hawthorne strainer and a fine mesh strainer to remove ice shards and any leaf bits.
Garnish
Express the yuzu zest over the surface of the drink to release oils, then rest the zest or a thin yuzu wheel on the rim. Add a small micro-herb or a delicate torn lime leaf for aroma.
Serve
Serve immediately while froth is still present. Advise guests to sip and appreciate the bright yuzu and the herbal complexity of The Botanist Gin tempered by the lime leaf aroma.
