Roast the vegetables
Preheat the oven to 425°F (220°C). On a rimmed baking sheet, toss the carrot batons, halved zucchini, mini bell peppers, and red onion wedges with 3 tablespoons olive oil, 1 tbs thyme, 1 tsp chopped rosemary, 1 tsp sea salt, and 1 tsp freshly ground black pepper. Spread them in a single layer and roast 20–25 minutes, tossing once halfway, until edges are caramelized and vegetables are tender.

Make the whipped feta
While the vegetables roast, combine 1 cup crumbled feta, 1 tablespoon Greek yogurt, 1 tsp lemon zest, 1 tsp lemon juice, and 1 tsp olive oil in a small food processor or blender. Pulse until smooth and airy, scraping down the sides once. If too stiff, add 1/2–1 tsp water or extra yogurt to reach a spreadable consistency. Taste and adjust seasoning; feta is salty so no extra salt is usually needed. Transfer to a small bowl and stir in half the sliced chives for garnish.

When vegetables are done, remove from oven and allow to cool 2–3 minutes. Spoon the roasted vegetables onto a warmed serving plate and dollop whipped feta across the top or serve alongside for guests to spread. Sprinkle remaining chives over the finished dish.
Cold Component — Citrus-Pomegranate Salad

Segment the orange and grapefruit over a bowl to catch juices, removing all membranes. Reserve any juice collected for the dressing.

In a large mixing bowl, combine 4 cups mixed baby greens, the segmented citrus, and 1 cup pomegranate seeds. Add 1 tablespoon toasted walnuts.

Dress the salad lightly just before serving—toss 1–2 tablespoons of dressing with the salad to coat evenly. Arrange on a chilled plate as a bright, refreshing counterpoint to the warm vegetables.
Small Hot Bite — Herbed Mushroom Crostini

Toast the crostini
Preheat oven to 375°F (190°C). Arrange 12 baguette slices on a sheet pan, brush each lightly with 1 tbs olive oil (or use a pastry brush to apply ~1 tsp per slice), and bake 6–8 minutes until golden and crisp. Remove and set aside to cool slightly.

Sauté the mushrooms
While bread toasts, heat 1 tsp unsalted butter and 1 tsp olive oil in a skillet over medium-high heat. Add 2 cups sliced cremini mushrooms and sauté undisturbed for 2 minutes to develop color, then stir. Add 2 cloves minced garlic and 1 tsp minced shallot; cook 1 minute until fragrant. Pour in 2 tsp dry white wine or vegetable stock to deglaze the pan, scraping up browned bits. Cook until liquid evaporates and mushrooms are tender, about 2–3 more minutes. Stir in 1 tbs chopped fresh parsley, 1 tsp salt, and 1/2 tsp black pepper. Taste and adjust seasoning.

Top each toasted baguette slice with a spoonful of the warm mushroom mixture. Arrange crostini on a serving platter and garnish with a small sprinkle of parsley or microgreens. Serve immediately so bread remains crisp.
