    Dry shake (if using egg white)

    Combine aged rum, fresh lime juice, fresh pineapple juice, passion fruit purée, simple syrup, falernum or orgeat (if using), egg white (if using) and Angostura bitters in a cocktail shaker without ice. Secure lid and shake vigorously for 15–20 seconds to emulsify and create foam.

    Wet shake

    Add ice (about 1 cup or enough to fill the shaker) to the shaker. Shake vigorously for 10–15 seconds until the shaker is very cold and the mixture is well chilled.

    Strain

    Double-strain the cocktail into a chilled coupe or rocks glass (over fresh ice if preferred) using a fine mesh strainer to remove small ice chips and any large fruit fibers.

    Finish

    If you used egg white, you should have a silky foam on top. Drop 2 dashes of Angostura bitters onto the foam and, if desired, drag a toothpick through them to create a pattern. If not using egg white, simply stir the bitters on the surface. Lightly grate nutmeg over the top or add an extra dash of bitters, if desired.

Garnish

    Garnish with a lime wheel or wedge and a small pineapple leaf or wedge on the rim. Serve immediately.
