Chill glass

Place a coupe or chilled cocktail glass in the freezer for 5–10 minutes or fill it with ice water while you prepare the drink.

Measure and combine

In a cocktail shaker, add 2 tablespoons baijiu, 1 tablespoon gin, 1/2 tablespoon dry vermouth, 1/2 tablespoon fresh lime juice, 1/2 teaspoon simple syrup, and 2 teaspoons Chinese five-spice or aromatic bitters.

Add ice and shake

Fill the shaker three-quarters full with ice (about 1 cup). Secure the lid and shake vigorously for 12–15 seconds until the outside of the shaker is frosty and well-chilled.

Prepare glass

If you used ice water to chill the glass, dump it now and quickly dry the glass. If the glass was in the freezer, remove it before straining.

Double strain and serve

Double-strain the cocktail through a fine-mesh strainer into the chilled coupe to remove ice shards and any spice sediment so the drink is smooth and silky.

Express oils and garnish

Hold an orange twist over the drink and firmly pinch it to express oils onto the surface, then rim the glass lightly with the twist and drop it into the cocktail (or discard if you prefer). Float a lime wheel on the surface and optionally tuck a small mint sprig alongside for aroma.

Serve immediately to spirited sippers. The drink should be bright, slightly savory from the baijiu and bitters, with citrus lift from lime and orange.
