    Combine and dry-shake (if using egg white)

    Add Ketel One vodka, mango purée, passion fruit purée, vanilla syrup, fresh lime juice, and egg white (if using) into a cocktail shaker without ice. Dry-shake vigorously for 15–20 seconds to emulsify and build foam.

    Shake with ice

    Add plenty of ice to the shaker and shake again vigorously for 10–15 seconds until the shaker is very cold to the touch. This chills, dilutes, and integrates the ingredients.

    Double-strain into glass

    Double-strain the cocktail (through the Hawthorne strainer and a fine strainer) into a chilled champagne coupe or flute, leaving room for Prosecco. Double-straining removes pulp and ice shards for a silky texture.

Top & Garnish

    Gently top the strained cocktail with 3 oz of well‑chilled Prosecco. Pour slowly down the side of the glass to preserve foam if egg white was used.

    Float half a fresh passion fruit on top of the foam or place it cut-side up in the glass. Add a dehydrated mango slice or a lime wheel on the rim if desired.

    Serve immediately with a short spoon so the guest can scoop some passion fruit pulp into the drink as they like.

Notes

    If you prefer a sweeter drink, increase vanilla syrup to 0.75–1 oz. If the passion fruit is very tart, reduce lime to 0.25 oz. For a lighter, fizz-forward version, use a flute and slightly reduce the shaken base to 1.5 oz vodka and 2 oz Prosecco.
