Brown Butter Oolong Syrup
Brown the butter
In a small skillet over medium heat, melt the unsalted butter. Continue cooking, swirling the pan occasionally, until the butter foams and turns a deep golden-brown with a nutty aroma, about 4–6 minutes. Remove from heat immediately to avoid burning.
Combine sugars and water
In a small saucepan, combine the light brown sugar, granulated sugar, and water. Stir to wet the sugars. Bring to a gentle simmer over medium heat, stirring so the sugars dissolve, about 3–4 minutes.
Infuse with oolong
Remove saucepan from heat and add the oolong tea leaves. Cover and steep for 6–8 minutes for a pronounced tea character. Taste at 6 minutes; steep longer if you prefer stronger tea notes. Strain the syrup through a fine-mesh sieve or cheesecloth into a heatproof jar, pressing gently on the leaves to extract flavor but avoid bitterness.
Finish and cool
Stir in vanilla extract if using. Let the syrup cool to room temperature, then refrigerate. The syrup will thicken slightly as it cools. Yield: about 1 cup; keeps refrigerated for up to 2 weeks.

Chill and prepare glass: choose an Old Fashioned/rocks glass. Place one large ice cube in the glass or prepare an ice chilled mixing glass if you prefer to stir and strain.
Stir: Stir the mixture briskly for 20–30 seconds (about 15–20 turns) until properly chilled and slightly diluted (target ~20–25% dilution by volume for classic spirit-forward balance).
Strain and serve: Strain the cocktail over the large ice cube in the prepared rocks glass.
Finish: Optionally, add one gentle spray of smoked wood or briefly pass the drink under a smoke cloche for added depth. Serve immediately.
