    Chill glass

    Place your serving glass (old fashioned or coupe) in the freezer or fill it with ice and cold water to chill while you prepare the cocktail.

    Measure ingredients

    Measure out Seedlip Spice, fresh lemon juice and agave syrup. Pick 8 fresh lemon balm leaves and lightly rinse if needed.

    Muddle lemon balm

    In a cocktail shaker, add the 8 lemon balm leaves and the agave syrup. Gently muddle the leaves with a muddler or the back of a spoon 6–8 times just to release essential oils and aroma — avoid pulverizing into bits.

    Combine and shake

    Add Seedlip Spice (2 oz), fresh lemon juice (0.75 oz) and a handful of ice (about 1 cup) to the shaker. Cap the shaker and shake vigorously for 12–15 seconds until well chilled and slightly frothy.

    Double strain (optional)

    If you prefer a clear, smooth drink without leaf fragments, double strain the shaken mixture through a fine mesh strainer into a chilled serving glass. If you like a more rustic presentation, strain through the shaker's strainer only.

    Lengthen (optional)

    If you want a longer, lighter cocktail, top with about 1 oz cold water or chilled soda after straining and gently stir once to combine.

Finish & Serve

    Garnish with a lemon wheel or twist on the rim and a small sprig of lemon balm. Clap the lemon balm between your palms once and tuck it into the drink to boost aroma. Serve immediately.
