Jade Flower Tea Base

Jade Cordial (sweet, floral syrup)

Method

Jade Flower Tea Base

  1. 1

    Heat water

Bring 600 ml filtered water to just under a boil, about 80–85°C (175–185°F). If you don't have a thermometer, bring to a simmer and let sit 1–2 minutes to cool slightly.

  2. 2

Measure the jasmine green tea leaves (2 tsp) and the dried osmanthus (1 tsp) into a teapot or heatproof pitcher. If using the optional young green tea leaves or matcha, add them now for a brighter green color and fresh vegetal note.

  3. 3

Pour 600 ml of the hot water over the tea and flowers. Steep, covered, for 2–3 minutes for a delicate infusion. Taste at 2 minutes and stop steeping when the aroma is floral and the brew is light green — avoid oversteeping to prevent bitterness.

  4. 4

Strain the tea into a heatproof bowl or pitcher to remove leaves and blossoms. Set the tea aside to cool to warm, then refrigerate briefly until cool (about 20–30 minutes) or proceed with iced cubes if making a cold served drink.

Jade Cordial (sweet, floral syrup)

  1. 5

Combine 60 g rock or cane sugar and 120 ml water in a small saucepan over medium heat. Stir until the sugar dissolves.

  2. 6

Add 1 tsp dried osmanthus and 1 tsp fresh lime zest to the saucepan. Bring mixture to a gentle simmer and cook 3–4 minutes to infuse the osmanthus and lime into the syrup. Do not boil hard — a gentle simmer extracts floral aroma without caramelizing the sugar.

  3. 7

Remove from heat and let the cordial cool, steeping for an additional 10 minutes for stronger aroma. Strain out the osmanthus and zest, pressing gently to extract liquid. Chill the cordial in the refrigerator until cool.

Assembly & Garnish

  1. 8

If you plan to serve chilled: fill serving glasses with the iced jade cubes (1 cup total divided between glasses). The iced jade cubes may be plain water ice or tea ice made by freezing some of the prepared tea to avoid dilution.

  2. 9

In a measuring jug, combine 360 ml of the cooled jasmine-osmanthus tea (approximately 2 cups) with 2–3 tablespoons of the chilled osmanthus-lime cordial. Adjust sweetness to taste — use 2 tbs for delicate sweetness, up to 3 tbs for a sweeter beverage. Add 1 tablespoon fresh lime juice and gently stir to integrate.

  3. 10

Pour the blended Jade Flower tea over the iced cubes in the serving glasses. If desired, lightly whisk or shake the tea before pouring to reincorporate any settled matcha or green notes.

  4. 11

Garnish each glass with a thin cucumber ribbon or a fresh mint leaf and a small pinch (about 1/4 tsp) of edible gold leaf or a sprinkle of candied osmanthus for a ceremonial, jewel-like finish.

  5. 12

Serve immediately. Encourage guests to inhale the floral aroma before sipping as an offering to the 'Jade Emperor' inspiration — it's a delicate, fragrant beverage meant to evoke reverence and calm.
