    Prepare

    Chill a coupe or Nick & Nora glass in the freezer or fill it with ice water while you prepare the cocktail.

    If using egg white: add 2 oz gin, melon liqueur, elderflower liqueur, lemon juice, simple syrup and egg white to a cocktail shaker (no ice) for a dry shake. Dry shake vigorously for 20–30 seconds to develop a silky foam.

    If not using egg white: add 2 oz gin, melon liqueur, elderflower liqueur, lemon juice and simple syrup to a shaker filled with ice.

    Add ice to the shaker (if you already dry-shook, now add 4–6 large ice cubes). Shake hard for 12–15 seconds until the exterior of the shaker is very cold. This chills and dilutes to the right level.

    Double-strain (through a fine mesh strainer and the shaker’s strainer) into the chilled coupe to remove ice shards and to keep the foam smooth. Aim to leave roughly 1/2 inch headroom for the sparkling wine.

    Gently top the cocktail with 2 oz dry sparkling wine (pour slowly down the side of the glass) to preserve the foam and add a lively finish. Do not overfill.

Garnish

    Express a lemon twist over the drink by pinching the zest over the surface to release oils, then run the twist around the rim and drop it into the glass.

    Optional: using tweezers, place a small flake of edible gold leaf on the foam for a gilded accent. Serve immediately.
