Brew the tea
Place 4 black tea bags in a heatproof pitcher. Pour 4 cups of boiling water over the tea bags. Steep 5 minutes for a balanced strength (up to 7 minutes for stronger tea).

Sweeten
Remove and discard the tea bags, gently pressing them against the side of the pitcher to extract flavor. While the tea is still hot, stir in 3 tbs granulated sugar until fully dissolved.

Add citrus and chill
Stir in 1 cup fresh lemon juice and 1 cup fresh orange juice. Add 2 cups cold water to adjust strength. Let the mixture come to room temperature, then refrigerate at least 1 hour until well chilled.

Serve
Fill glasses with ice (about 1/2 cup ice per glass). Pour chilled citrus iced tea over ice. Garnish each glass with a lemon slice and 2 mint leaves if using. Taste and add more sugar or lemon to taste if desired.

Make ginger syrup
In a small saucepan combine 1 cup water and 2 tbs sliced fresh ginger. Bring to a simmer over medium heat and simmer gently 8–10 minutes to infuse. Remove from heat, strain out ginger, and stir in 3 tbs honey until dissolved. Let cool to room temperature.

Assemble
In a pitcher, combine the cooled ginger-honey syrup and 1 tbs fresh lime juice. Add 4 cups chilled sparkling water and gently stir once to combine without flattening the bubbles.
