Classic Whiskey Sour (1 cocktail)

Prepare and Dry Shake
If using egg white, combine 2 oz bourbon, 0.75 oz fresh lemon juice, 0.75 oz simple syrup and 0.5 egg white in a cocktail shaker without ice. Dry-shake vigorously for 10–15 seconds to emulsify and create foam.

Shake with ice
Add a handful of ice to the shaker (about 1 cup). Shake vigorously for 10–15 seconds until well-chilled and frothy.

Strain and garnish
Double-strain into an Old Fashioned glass over fresh ice (or serve neat in a coupe). Add 2 dashes Angostura bitters on the foam (if egg white used) and garnish with a lemon wheel/twist and a maraschino cherry.

If not using egg white: combine bourbon, lemon juice, simple syrup and ice in the shaker, shake 10–15 seconds, strain over fresh ice and garnish as above.
Classic Margarita (1 cocktail)

Prepare the glass
Rub a lime wedge around the rim of a rocks or coupe glass, then dip the rim into coarse salt to coat. Set aside.

Shake
In a shaker filled with ice, combine 2 oz blanco tequila, 1 oz fresh lime juice, 1 oz orange liqueur and 0.25 oz simple syrup (optional). Shake vigorously for 10–12 seconds until chilled.

Build in glass
Place 0.25 oz simple syrup (or a sugar cube) in a rocks glass. Add 3 dashes Angostura bitters and a splash (about 0.25 oz) of water if using a sugar cube. Muddle gently to dissolve.

Add whiskey and ice
Add 2 oz bourbon or rye and one large ice cube. Stir gently for 20–30 seconds to chill and dilute slightly.

Express and garnish
Express the oils from an orange peel over the drink by holding peel over the glass and giving it a firm squeeze, then rub the peel around the rim and drop it in. Add a maraschino cherry if desired.
Moscow Mule (1 cocktail)

Build
Fill a copper mug or highball glass with ice (about 1 cup). Add 2 oz vodka and 0.5 oz fresh lime juice.

Top and garnish
Top with 4 oz chilled ginger beer, stir gently once to combine. Garnish with a lime wedge and a sprig of fresh mint if using.
Martini (Classic Dry, 1 cocktail)

Chill and mix
Fill a mixing glass with ice. Pour in 2.5 oz gin (or vodka) and 0.5 oz dry vermouth. Stir (for gin) 20–30 seconds until well-chilled; for a slightly more diluted martini, stir longer. If you prefer a shaken martini, shake vigorously for 8–10 seconds and strain.
