Cocktail
Dry shake
Add gin, maraschino liqueur, fresh lemon juice, simple syrup, cherry blossom syrup (or grenadine), egg white (if using), and Angostura bitters to a cocktail shaker without ice. Seal and shake vigorously for 20β30 seconds to emulsify the egg white and create froth.
Wet shake
Open the shaker, add plenty of ice, reseal and shake hard for 10β15 seconds until the shaker is cold to the touch and well-chilled.
Double strain and serve
Double-strain the cocktail through a fine mesh strainer into the chilled coupe or Nick & Nora glass to remove ice shards and any coagulated egg white particles. The drink should present a pale pink hue with a silky foam layer on top.
Garnish
Place one maraschino cherry on a pick and rest it on or in the glass. Add a thin lemon twist or an edible cherry blossom petal on the foam for visual contrast. Optionally drop 1 small drop of Angostura bitters on the foam and gently drag a toothpick through it for a simple two-dot pattern.
Serving & Notes
Serve immediately while chilled. If you prefer the cocktail less sweet, reduce the simple syrup to 0.25 oz or the cherry blossom syrup to 0.125 oz. For a non-alcoholic version, replace gin with chilled white tea or seedlip-style spirit and maraschino liqueur with a non-alcoholic cherry extract diluted to taste.
