Prepare poppyseed syrup (make ahead)
Combine 1/2 cup water, 1/2 cup granulated sugar, and 1 tablespoon poppy seeds in a small saucepan. Bring to a gentle simmer while stirring until the sugar dissolves. Remove from heat and let cool to room temperature, then strain through a fine mesh to remove most seeds (reserve a few if you want visible specks). Store refrigerated up to 2 weeks. Use 1/4 oz per cocktail.
Dry shake (if using egg white)
If using the egg white for a silky foam, add vodka, blue curaçao, lemon juice, simple syrup, apple liqueur, poppyseed syrup, and egg white to a cocktail shaker without ice. Seal and shake vigorously for 10–15 seconds to emulsify and build foam.
Shake with ice
Add ice to the shaker (about 1 cup) and shake vigorously for 12–15 seconds until well chilled and slightly diluted. If not using egg white, combine all liquid ingredients and ice and shake 12–15 seconds.
Double-strain and serve
Double-strain the cocktail into a chilled coupe or martini glass using a Hawthorne strainer and a fine mesh strainer to remove small ice chips and any large poppy seed solids for a clean finish. The drink should be bright blue with a pale foam (if egg white used).
Garnish & Finish
Float the thin apple slice on the foam or rest it on the rim. Lightly sprinkle 1/4–1/2 tsp poppy seeds over the foam or apple slice to evoke the 'poppy' element in the name. Add a lemon twist at the side if desired for extra aroma.
Serve immediately. Recommend sipping slowly to appreciate the layered flavors: citrus and sugar balancing the blue curaçao's orange notes, apple warmth from the liqueur, and subtle nutty crunch from the poppy seeds.
