Brew butterfly pea concentrate

Steep 1 tablespoon dried butterfly pea flowers (or 2 tea bags) in 3 ounces of just-boiled water for 5 minutes until deeply colored. Strain and cool to room temperature, then refrigerate briefly if needed. You will use 0.5 oz of this concentrate for one cocktail. (Alternatively use pre-made butterfly pea tea.)

Mix base

Fill a cocktail shaker with ice (about 1 cup). Add 2 oz dry gin, 0.5 oz fresh lime juice, 0.5 oz simple syrup, and 0.5 oz of the cooled butterfly pea concentrate. Secure the shaker and shake vigorously for 8–12 seconds until well chilled.

Assemble spritz

Fill a highball or wine glass with fresh ice. Strain the shaken gin mixture into the glass over the ice. Slowly top with 3 oz chilled pink grapefruit soda to preserve the fizz and allow the soda to create a gradual gradient with the butterfly pea.

Optional color shift (acid)

If you want a color-changing effect, squeeze a thin lime wedge or add an additional 0.25 oz fresh lime juice on top — the added acidity will shift the butterfly pea from blue to purple/pink where it mixes with the grapefruit soda.

Garnish and serve

Garnish with an edible flower or a grapefruit twist perched on the rim. Serve immediately with a straw or cocktail pick.
