Prepare the glass

Half-fill a rocks glass with ice to chill while you build the cocktail. On a small plate, mix the smoked salt with a tiny pinch of finely grated grapefruit zest. Run a lime wedge around the rim of the chilled glass, then gently press the rim into the salt-zest mix to coat about half of the rim (this creates the 'half sleeve' appearance). Discard the chilling ice.

Shake the cocktail

Add blanco tequila, reposado tequila, fresh lime juice, fresh grapefruit juice, agave syrup, Aperol, and orange bitters into a cocktail shaker filled with ice. Seal and shake vigorously for 12–15 seconds until well chilled and slightly diluted.

Strain

Double-strain the mixture into the prepared rocks glass over one large ice cube (or fresh ice). Double-straining removes small ice shards and pulp for a silky finish.

Garnish & finish

Express the oils from the grapefruit twist over the top of the drink by pinching it skin-side down above the glass, then rub the peel along the rim's non-salted side for aroma. Drop the twist onto the surface. If you like a gentle heat, float one thin jalapeño slice on top (remove seeds for milder spice). Serve immediately.
