Trim

Pat the brisket dry with paper towels. Trim excess hard fat from the surface but leave a thin layer (about 1/8–1/4 inch) to keep the meat moist during long cooking. Remove any large hard pieces of fat or silver skin.

Make the rub

In a small bowl combine kosher salt, coarse black pepper, garlic powder, onion powder, paprika and brown sugar. Mix thoroughly to create an even rub.

Apply rub

Rub the vegetable oil over the entire brisket to help the seasoning adhere. Generously apply the rub to all sides of the brisket, pressing it into the meat. Let the brisket sit uncovered in the refrigerator for at least 1 hour or up to overnight for deeper flavor. If short on time, let it rest at room temperature 30 minutes before cooking.

Preheat oven or smoker

For oven braise method: preheat oven to 300°F (150°C). For smoker method: prepare smoker to maintain 225–250°F (107–121°C) using wood of choice (pecan, oak, hickory).

Cooking (braise in oven or cook in smoker)

Heat a heavy, oven-safe Dutch oven or large skillet over medium-high heat with the vegetable oil. When shimmering, sear the brisket fat-side down for 4–6 minutes until well browned, then brown the sides for 2–3 minutes each. This step builds flavor but can be skipped if using a smoker.

Assemble braising liquid (oven)

If using the oven: combine beef broth, soy sauce, apple cider vinegar and Worcestershire sauce in a bowl. Place the seared brisket in the Dutch oven fat-side up. Pour the liquid around (not over) the brisket so the rub stays on the meat. Add bay leaves and thyme sprigs to the liquid. The liquid should come up about 1–1.5 inches on the side of the brisket.

Braise in oven

Cover the Dutch oven tightly with a lid or aluminum foil and transfer to the preheated 300°F oven. Cook until fork-tender and an instant-read thermometer inserted into the thickest part reads 195–205°F, about 3.5–5 hours for a 5 lb brisket (start checking at 3.5 hours). Check once after 2.5–3 hours: if liquid is low, add up to 1/2 cup more broth. When tender, remove from oven.

Smoke method

If using a smoker: place the rubbed brisket fat-side up directly on the smoker grate. Maintain 225–250°F and smoke until the bark forms and internal temp reaches roughly 160–170°F (this may take 4–6 hours depending on size and smoker). At that point, wrap tightly in butcher paper or heavy-duty foil with 1/2 cup beef broth or reserved braising liquid to speed cook-through (the 'Texas crutch'), then return to smoker until internal temp reaches 195–205°F and brisket is fork-tender. Total time typically 8–12 hours depending on weight and smoker.

Rest

Once the brisket reaches target temperature and is tender, remove it from oven or smoker. Tent loosely with foil and let rest at room temperature for 30–60 minutes (30 minutes is usually sufficient for a 5 lb brisket). Resting allows juices to redistribute and makes slicing cleaner.

Finishing & serving

Slice

Transfer the rested brisket to a cutting board. Identify the grain direction — the flat and point may have different grain directions. Slice the flat across the grain into 1/4-inch thick slices. If serving the point, slice or pull apart as desired. Keep slices slightly overlapping to retain juices.

Finish sauce (optional)

Skim some of the fat from the braising liquid. Place the liquid in a small saucepan over medium heat, add butter and simmer until reduced slightly and glossy (3–5 minutes). Stir in barbecue sauce if desired and taste for seasoning. Spoon some sauce over sliced brisket or serve on the side.

Garnish and serve

Sprinkle chopped fresh parsley over the slices and serve immediately with desired sides (mashed potatoes, pickles, sliced onions, ribs, or brisket sandwiches). Leftovers keep well and often taste better the next day.
