Strawberry Shake

Enjoy a creamy and refreshing regular-sized strawberry shake made with ripe strawberries and smooth vanilla ice cream.

Harvest the Mencía grapes at peak ripeness, usually in late September to early October.

Harvesting

Crush and destem the grapes to release the juice. This can be done using a grape crusher or by hand.

Crushing and Destemming

Transfer the crushed grapes into a fermentation vessel. Add yeast to initiate fermentation. Allow the mixture to ferment for 7-14 days, maintaining a temperature of 20-25°C.

Fermentation

Once fermentation is complete, press the grape mixture to extract the wine from the solids.

Pressing

Transfer the wine into oak aging barrels for maturation. Allow the wine to age for a minimum of 6 months, which will add complexity and character.

Aging

After aging, bottle the wine and add sulfites to stabilize. Seal the bottles and label them.

Bottling

Before serving, chill the wine in the refrigerator for about 30 minutes.

Chilling

Serve Mencía in a medium-sized red wine glass to enhance its aromas.
