Complete Trim Center Cut Filets

Method

Preparation and Cooking

1

Prepare the Marinade

In a small bowl, mix together the olive oil, garlic powder, onion powder, salt, black pepper, fresh rosemary, and lemon juice until well combined.

2

Marinate the Filets

Place the 8 center cut filets in a large resealable plastic bag or a shallow dish. Pour the marinade over the filets, ensuring they are well coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

3

Preheat the Grill or Oven

Preheat your grill to medium-high heat or your oven to 400°F (200°C) to prepare for cooking the filets.

4

Cook the Filets

If grilling, place the marinated filets directly on the grill grates. Grill for about 4-5 minutes on each side, or until the internal temperature reaches 145°F (63°C) for medium-rare. If using the oven, place the filets on a baking sheet and bake for 12-15 minutes, flipping halfway through.

5

Rest and Serve

Once cooked, remove the filets from the grill or oven and let them rest for 5 minutes before serving. This allows the juices to redistribute for a juicier steak. Serve warm with your choice of sides.
