Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

Add Garlic and Tomatoes

Stir in the minced garlic and cook for an additional minute. Then add the canned diced tomatoes (with their juice) and stir to combine.

Combine Lentils and Broth

Add the dry lentils, vegetable broth, bay leaf, thyme, salt, and black pepper to the pot. Bring the mixture to a boil.

Once boiling, reduce the heat to low and let the soup simmer for about 30-35 minutes, or until the lentils are tender.

Add Spinach and Lemon Juice

Remove the bay leaf from the soup. Stir in the spinach and lemon juice. Cook for an additional 5 minutes until the spinach is wilted.
