Cut the peeled potatoes into 2–3 cm (about 1 inch) cubes. Rinse under cold water and pat dry thoroughly with a clean towel to remove excess starch.

Prepare potatoes

Bring a large pot of salted water to a boil. Add the potato cubes and simmer 5 minutes — they should be just starting to soften but not falling apart. Drain and let dry in a single layer for a few minutes.

Par-cook

Heat vegetable oil in a deep skillet or heavy pot to 175°C (350°F). Fry the potatoes in batches without crowding until golden and crisp, about 6–8 minutes per batch. Use a slotted spoon to transfer to a paper towel-lined tray. Sprinkle with 1 tsp salt and 1 tsp smoked paprika while hot.

Heat 2 tbsp olive oil in a saucepan over medium heat. Add the chopped onion and cook until soft and translucent, about 6–8 minutes. Add the minced garlic and cook 30 seconds until fragrant.

Stir in the tomato paste and cook 1 minute. Add the crushed tomatoes, sherry vinegar, smoked paprika, cayenne, 1 tsp salt and 1/2 tsp sugar. Bring to a simmer, reduce heat to low and cook gently 15–20 minutes, stirring occasionally, until slightly thickened.

Taste and adjust seasoning. If you prefer a smoother sauce, blitz with an immersion blender or transfer to a blender and purée until smooth. Keep warm until serving and spoon over the fried potatoes.

Pat shrimp dry and season with 1 tsp salt. Heat 4 tbsp olive oil in a large skillet over medium-high heat until shimmering.

Add the sliced garlic and chili flakes and cook, stirring, just until garlic begins to sizzle and turn pale golden, about 30–45 seconds — do not burn.

Add shrimp in a single layer and cook 1.5–2 minutes per side until pink and opaque. Spoon the oil and garlic over the shrimp as they cook. Remove from heat, stir in chopped parsley and a squeeze of lemon juice to taste. Transfer to a warm serving dish with some of the garlicky oil.

Toast slices of bread until crisp and golden (either under a broiler or on a grill pan). While still warm, rub each slice with the cut side of the garlic clove.

If using whole tomatoes: halve a ripe tomato and rub the flesh directly over the garlic-rubbed bread to transfer juice and pulp. If using canned crushed tomatoes: spoon a little onto the toast and spread thinly. Drizzle each toast with a little olive oil and sprinkle with sea salt.

Combine the olives with 2 tbsp olive oil, lemon zest, dried oregano and freshly ground black pepper. Toss and let marinate for at least 15 minutes at room temperature (or up to a few hours).

Arrange marinated olives and Manchego cheese cubes on a small board or platter for serving.

Heat 3 gallons of mash water to approximately 165°F (74°C). This accounts for drop in temperature when adding crushed grains.

Heat strike water

Pour crushed pale malt, caramel malt, and flaked barley into the heated water while stirring to avoid clumps. Target mash temperature: 152°F (67°C). Hold at 152°F for 60 minutes to convert starches to fermentable sugars.

Add grains and hold temperature

Raise the mash temperature to 168°F (76°C) for 10 minutes by adding a small amount of near-boiling water or applying direct heat. This stops enzymatic activity and makes lautering easier.

Mash out

Prepare sparge water: heat ~3 gallons to 168°F (76°C). Place a strainer or lautering setup under the mash and slowly rinse the grain bed with the hot sparge water to collect approximately 6.5–7 gallons of wort (adjust for your system losses).

Bring collected wort to a rolling boil. Once boiling, watch carefully to avoid boil-over.

Bring wort to a boil

Add 1 oz bittering hops at the start of the 60-minute boil. This provides the primary bitterness for balance.

Bittering hop addition

With 15 minutes left in the boil, add 1 oz flavor/aroma hops and 1 tsp Irish moss or Whirlfloc (if using) to help clarify the beer.

Mid/Flavor hop addition

At 5 minutes remaining, add 0.5 oz late/aroma hops for fresh hop aroma and flavor.

Late hop addition

After the 60-minute boil, turn off heat and proceed to chill the wort quickly.

Use an immersion chiller, counterflow chiller, or an ice bath to cool the boiled wort to 68°F (20°C) as quickly as possible to reduce contamination and improve clarity.

Once cooled, transfer the wort to a sanitized fermenter, leaving behind as much break material and hops as possible (use a strainer or hop bag if needed). Top up with sanitized water to reach a total volume of 5 gallons if needed.

Aerate the cooled wort by vigorous shaking, splashing, or pure oxygen (if available). Rehydrate or prepare the yeast per manufacturer instructions and pitch into the wort when temperature is around 65–68°F (18–20°C).

Aerate and pitch yeast

Seal fermenter with an airlock and ferment at 65–68°F (18–20°C) for ~7–10 days or until active fermentation slows (specific gravity nearing terminal value).

Primary fermentation

If desired, transfer to a secondary fermenter for conditioning and clearing for 1–2 weeks at the same temperature or slightly cooler.

Optional secondary

Dissolve 3.5 oz (100 g) priming sugar in 0.5 cup boiling water, boil for 2 minutes, then cool to room temperature. Sanitize a bottling bucket and equipment.

Prepare priming solution

Rack (transfer) fermented beer gently into the sanitized bottling bucket, avoiding sediment, then pour the cooled priming solution into the bucket and stir gently to evenly distribute without introducing oxygen.

Mix with beer

Fill sanitized bottles, leaving about 1 inch headspace, cap them securely. Expect roughly 48–52 bottles (12 oz) from a 5-gallon batch depending on losses.

Bottle

Store bottles at 68–72°F (20–22°C) for 2 weeks to carbonate, then chill and condition further for best flavor for another 1–2 weeks if desired.

Condition

Sanitize all equipment that contacts wort/beer post-boil using a no-rinse sanitizer. Clean kettles and fermenters promptly after use. Store bottles in a cool dark place once conditioned.

Estimated original gravity for this recipe: ~1.048–1.052, expected ABV: ~4.8–5.3% depending on fermentation. Adjust malt, hops, and yeast choices to style preferences.

Chill or Open and Decant

Use a clean wine opener (waiter’s corkscrew or two-prong opener) to remove the cork. Wipe the bottle lip with a clean cloth. Pour slowly into appropriate glassware: red wine into large-bowled glasses, white wine into smaller-bowled or tulip glasses.

Pour recommended serving size: about 5 oz (150 ml) per glass for tasting or 6–7 oz (180–210 ml) for a regular pour. Fill only to the widest part of the bowl so aromas can collect.

If using the chilled white bottle, follow the same opening steps. If the cork is difficult or the bottle is sparkling, take appropriate precautions: chill sparkling wine to 40–50°F (4–10°C) and open slowly with a towel over the cork.

Arrange cheeses on a board. Bring soft cheeses to room temperature 30 minutes before serving so flavors are more expressive.

Slice baguette or arrange crackers on a plate. Rinse and dry grapes or slice apple/pear and place next to cheeses. Offer a small knife for spreading and a few plates and napkins for guests.

Serve the wine with the cheese plate. Suggest common pairings: full-bodied red with aged hard cheeses, light red or white with soft cheeses and fruit.

Cook 3–5 minutes per side (depending on thickness) until golden and crisp. Transfer to paper towels to drain and sprinkle with 0.25 tsp sea salt immediately.

Cook bacon (stovetop method)

Wipe out skillet if very browned but leave a little bacon fat (about 1 tsp) in the pan; otherwise melt 2 tbs unsalted butter in the skillet over medium-low heat. Add bread slices and toast 2–3 minutes per side until golden and crisp. Press gently with a spatula for even contact. If using oven-baked bacon, you can brush bread lightly with reserved bacon fat before toasting for extra flavor.

Toast the bread in pan

When both sides of the bread are toasted, remove from skillet. Lightly crack black pepper (about 1 tsp) over the warm bread. Arrange two slices of bacon on each piece of toast. If desired, add a thin smear (about 1 tsp) of hot sauce or mustard on the bread before bacon for extra flavor.

Season and finish

Seal the shaker and shake vigorously without ice for 15 seconds to emulsify the egg white and build a frothy texture.

Open the shaker, add about 1 cup of ice, reseal, and shake hard for 10–15 seconds until the shaker is very cold to the touch and properly diluted (approximately 15–20% dilution).

Push the aromatics to the side and add the ground pork or beef to the center of the skillet. Break it up with a spatula and cook until browned and no longer pink, about 5–7 minutes. Cook meat (if using)

Add the sliced mushrooms and diced bell pepper to the skillet. Cook until the mushrooms have released their moisture and the peppers soften, about 4–5 minutes. Stir in the smoked paprika, dried thyme, the remaining salt and pepper, and Worcestershire sauce. Mix to combine.

Add vegetables and seasonings

Stir in the chopped tomatoes, scraping any browned bits from the bottom of the pan. Pour in the heavy cream, bring the mixture to a gentle simmer, and reduce heat to low. Simmer for 3–4 minutes so flavors meld and sauce begins to thicken slightly.

Stir in 3/4 cup of the shredded cheese until fully incorporated and creamy. Taste and adjust seasoning as needed. Remove from heat and stir in 1 tablespoon of chopped parsley.

Melt in cheese

If you want a lightly browned cheesy top, sprinkle the remaining 1/4 cup cheese over the skillet filling. Place the skillet under a hot broiler for 1–2 minutes, watching carefully, until the cheese is bubbly and golden. Use an oven mitt — the skillet handle will be hot.

Top and broil (optional)

Remove the skillet from the oven (or simply remove from stovetop if you skipped broiling). Sprinkle the remaining 1 tablespoon chopped parsley over the top and add a squeeze of lemon if using.

Plate and garnish

Serve the warm skillet dip directly from the skillet with the buttery crackers arranged around it for scooping. Each guest can scoop a spoonful of the hot filling onto a cracker and eat immediately. Reheat gently over low heat if the dip cools while serving.

Remove all cheeses from the refrigerator 20–30 minutes before serving so their flavors and textures open up. Place the aged cheddar, goat cheese, and blue cheese on a wooden board or platter, spacing them so knives won't cross flavors.

Cut the cheddar into thin wedges or bite-sized slices. Put the goat cheese in a small spreadable log or leave whole with a small cheese knife. Crumble or leave a chunk of blue cheese for guests to break off pieces. Garnish lightly with the fresh herb sprig near the goat cheese.

Slice and shape

If nuts are raw, toast them in a dry skillet over medium heat for 4–6 minutes, shaking frequently, until fragrant and lightly browned. Let cool. If using pre-roasted nuts, simply measure and place them in a small bowl or scatter around the board.
