Marinate the Chicken
In a large bowl, combine the yogurt, olive oil, minced garlic, ground cumin, paprika, salt, black pepper, and lemon juice. Cut the chicken breast into bite-sized pieces and add to the marinade. Mix well to coat the chicken evenly. Cover and refrigerate for at least 1 hour, preferably overnight.
Prepare the Veggies
While the chicken is marinating, cut the bell peppers and red onion into chunks suitable for skewering.
Assemble the Skewers
After marinating, thread the marinated chicken, bell peppers, and red onion onto the skewers, alternating as you go.
Cook the Kebabs
