Salad Preparation

Prepare the Mushrooms

Clean the wild foraged mushrooms thoroughly using a damp cloth or soft brush. Slice them into bite-sized pieces.

Sauté the Shallots

In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped shallots and sauté until they are translucent and fragrant, about 3-4 minutes.

Cook the Mushrooms

Add the sliced mushrooms to the skillet with the shallots. Sauté for about 5-7 minutes, until the mushrooms are tender and golden brown. Season with salt and pepper to taste.

Make the Sherry Vinaigrette

In a small bowl, whisk together 3 tablespoons of sherry vinegar, 6 tablespoons of olive oil, salt, and pepper to taste.

Assemble the Salad

In a large bowl, combine the sautéed mushrooms and shallots. Drizzle with the sherry vinaigrette and toss gently. Top with crumbled Crow's dairy cheese.
