Puff Pastry and Cream
Method
Assembly and Baking
Prepare Puff Pastry
Preheat your oven to 400°F (200°C). Roll out the puff pastry sheets on a lightly floured surface to smooth them out. Cut each sheet into rectangles, about 3 inches by 5 inches.
Bake Puff Pastry
Place the cut rectangles on a baking sheet lined with parchment paper. Prick the surface with a fork to prevent puffing too much. Bake for 15-20 minutes or until golden and crisp. Allow to cool completely.
Make Whipped Cream
In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, whip the cream until soft peaks form.
Assemble the Mille Feuille
Once the puff pastry is cool, take one piece and spread a layer of whipped cream on top. Drizzle some raspberry purée over the cream, then place another piece of puff pastry on top. Repeat the process, adding another layer of cream and raspberry purée, followed by a final piece of puff pastry.
Garnish and Serve
Top the final layer of puff pastry with a dollop of whipped cream, fresh raspberries, and a drizzle of raspberry purée. Slice into portions and serve immediately.
