Preparation
1. Prepare the Rice Pilaf
In a saucepan, heat olive oil over medium heat. Add onion and garlic, sauté until softened. Stir in rice and toast for 2 minutes. Add vegetable broth, bring to boil, then reduce heat, cover, and simmer for 15-20 minutes until rice is tender.
2. Cook the Parisian Mélange
In a skillet, melt butter over medium heat. Add diced carrots, zucchini, and bell pepper, season with salt and pepper. Sauté until vegetables are tender, about 8-10 minutes. Stir in fresh parsley.
3. Prepare the Grapefruit Glaze
In a small saucepan, combine grapefruit juice, honey, soy sauce, and cornstarch mixed with water. Heat over medium heat, stirring until the mixture thickens and becomes syrupy.
4. Cook the Salmon
Preheat the oven to 400°F (200°C). Rub salmon fillets with olive oil, salt, and pepper. Place on a baking sheet and bake for 12-15 minutes until cooked through.
Serving
5. Plate the Dish
On each plate, place a serving of rice pilaf, top with the sautéed vegetables, and lay the salmon fillet on top. Drizzle grapefruit glaze over the salmon before serving.
