Spicy Aioli

Preparation
1. Prepare the Spicy Aioli
In a small bowl, combine mayonnaise, sriracha, minced garlic, and lemon juice. Mix well and set aside.
2. Make the Cilantro Pesto
In a food processor, combine cilantro, pine nuts, parmesan, olive oil, minced garlic, and salt. Blend until smooth, then set aside.
3. Prepare the Grilled Pineapple
Preheat a grill or grill pan. Mix brown sugar and cinnamon, then sprinkle over pineapple slices. Grill for 2-3 minutes on each side until caramelized.
4. Prepare the Rock Shrimp
In a bowl, mix flour, cornstarch, baking powder, and salt. Gradually whisk in cold sparkling water until the batter is smooth.
Cooking
5. Fry the Rock Shrimp
Heat oil in a deep pot to 350°F (175°C). Dip rock shrimp in the batter and fry in batches until golden brown, about 3-4 minutes. Drain on paper towels.
6. Prepare Red Pepper
Slice the red bell pepper into strips and set aside.

On a serving plate, arrange crispy rock shrimp, grilled pineapple, and red pepper strips. Drizzle with spicy aioli and cilantro pesto before serving.
