Prepare the Mussels

Rinse the mussels under cold water and scrub the shells to remove any dirt. Remove the beards (the fibrous strands) by pulling them away from the shell.

Sauté Aromatics

In a large pot, melt the butter over medium heat. Add the chopped shallots and minced garlic, and sauté until softened and fragrant, about 3-4 minutes.

Add Wine and Thyme

Pour in the white wine and add the fresh thyme. Bring to a simmer.

Cook the Mussels

Add the cleaned mussels to the pot, cover with a lid, and steam for about 5-7 minutes, or until the mussels have opened. Discard any mussels that remain closed.

Season and Serve

Season with salt and black pepper to taste. Serve immediately in bowls, along with the broth.
