For the Carrot Cake Bites
Method
Instructions
Preheat the Oven
Preheat your oven to 350°F (175°C).
Mix Dry Ingredients
In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, ground cinnamon, and a pinch of salt.
Combine the Mixtures
Gradually add the wet mixture to the dry ingredients, stirring until just combined. Fold in the grated carrots and chopped walnuts.
Bake the Bites
Spoon the batter into greased mini muffin tins, filling each cup about 2/3 full. Bake for 15-20 minutes or until a toothpick comes out clean.
Prepare Cream Cheese Frosting
While the bites are baking, beat the cream cheese in a bowl until smooth. Gradually add powdered sugar and milk, mixing until creamy.
Frost the Bites
Once the carrot cake bites have cooled, remove them from the muffin tins and frost the tops with the cream cheese frosting.
