Crawfish Filling Preparation
Sauté the Vegetables
In a large skillet over medium heat, add a tablespoon of oil. Once hot, add the diced green bell pepper, celery, and onion. Sauté for about 5-7 minutes until the vegetables are softened.
Add Garlic and Crawfish
Stir in the minced garlic and sauté for an additional 1-2 minutes. Then, add the crawfish tails and Cajun seasoning. Cook for another 3-4 minutes, stirring occasionally to combine.
Mix with Mayonnaise
Remove the skillet from heat and let the mixture cool slightly. In a large bowl, combine the crawfish mixture with mayonnaise and lemon juice. Mix well until fully combined. Season with salt and pepper to taste if desired.
Sandwich Assembly
Prepare the Bread
Slice the French bread loaves in half lengthwise. If desired, lightly toast the bread in the oven for a few minutes until just crispy.
Assemble the Poboys
Spread a generous amount of the crawfish filling onto the bottom half of each bread loaf. Top with shredded lettuce, slices of tomato, pickles, and drizzle with hot sauce to taste.
Serve
Place the top half of the bread on the sandwich and cut into individual portions. Serve immediately with extra hot sauce on the side.
