Method

Pico de Gallo

Combine the diced tomatoes, diced white onion, chopped cilantro, minced jalapeño, 2 tbs lime juice and 1 tsp salt in a bowl. Mix gently and adjust salt or lime to taste. Let rest 10–15 minutes for flavors to marry.

Guacamole

Halve and pit the avocados. Scoop flesh into a bowl and mash lightly with a fork leaving some texture. Stir in 1 tbs lime juice, 0.5 tsp salt, 2 tbs finely diced onion, 1 tbs chopped cilantro and 0.5 minced jalapeño if using. Taste and adjust seasoning. Cover with plastic touching surface to prevent browning.

Prepare Protein (choose per selection)

Marinade

In a bowl combine 2 tbs olive oil, 2 tsp minced garlic, 1 tsp ground cumin, 1 tsp chili powder, 1 tsp salt and 0.5 tsp black pepper. Reserve about 1 tbs for brushing the rolls if desired.

Carne Asada

For steak: pound lightly if needed and toss with half the marinade (or enough to coat) and let sit 20–30 minutes at room temperature or up to 2 hours refrigerated. Heat a cast-iron skillet or grill over high heat until smoking. Sear steak 2–3 minutes per side for medium-rare depending on thickness. Let rest 5 minutes then slice thinly against the grain.

Pollo Asado

For chicken thighs: toss with marinade and let sit 30 minutes. Grill or sear in a skillet over medium-high heat until internal temperature reaches 165°F (about 6–8 minutes per side depending on thickness). Rest 5 minutes and dice or slice.

Carnitas (shortcut)

If using pre-made carnitas: reheat in a skillet with a little oil until edges crisp (4–6 minutes). For homemade slow-cooked carnitas: braise pork shoulder with aromatics until tender then shred and crisp in the oven or skillet.

Milanesa

For milanesa: pound thin, dredge in seasoned flour, egg, and breadcrumbs then fry in 1/4 inch oil over medium-high heat 2–3 minutes per side until golden. Drain on paper towels and slice to fit roll.

Slice rolls lengthwise leaving one edge attached if preferred. Lightly butter the cut faces with the 2 tbs butter and toast in a skillet or on a griddle over medium heat until golden and crisp, about 1–2 minutes per side. Meanwhile, mix 1/2 cup mayonnaise with 1 tbs minced chipotle and 1 tsp lime juice to make a chipotle mayo.

Spread a generous layer of chipotle mayo on both cut sides of each toasted roll.

Assemble & Cheese Melt

On the bottom half of each roll, layer a portion of the warm chosen protein (about 4 oz per sandwich). Top the protein with 1/2 cup shredded or sliced cheese (divide 2 cups across 4 sandwiches). Return open-faced sandwiches to the hot skillet or under a broiler for 1–2 minutes until cheese melts and becomes slightly bubbly.

Remove from heat and add 2–3 tbs guacamole over the melted cheese, then spoon 2–3 tbs pico de gallo. Add a tablespoon of sour cream and a handful (about 1/2 cup) of shredded lettuce. Add pickled jalapeños if desired, and season with salt & pepper to taste.

Close the sandwich, press gently, slice in half, and serve immediately.

Finishing & Serving

Serve each torta warm with extra lime wedges, remaining pico de gallo and guacamole on the side. Leftover components store separately: proteins up to 3–4 days refrigerated, guacamole 1 day with surface plastic wrap, pico up to 3 days.
