Method
Prepare Protein
Choose and prep meat
Select one protein option. If using ground beef, leave as-is. If using chicken breast, dice into 1/2-inch pieces. If using pork shoulder, cut into small bite-sized pieces. Pat meat dry with paper towels.
Cook protein
Heat 1 tbs vegetable oil in a large skillet over medium-high heat. Add the chosen protein and sear/stir until browned: ground beef 6-8 minutes, diced chicken 6-8 minutes until cooked through, pork pieces 8-12 minutes until browned and cooked through. Break up ground beef as it cooks.
Season protein
Reduce heat to medium. Sprinkle onion powder, garlic powder, ground cumin, chili powder, smoked paprika, kosher salt, and black pepper over the meat. Stir to combine and toast the spices 30-45 seconds. Add 1/4 cup water or chicken broth, scrape browned bits from the pan, and simmer 2-3 minutes until sauce clings to the meat and liquid is mostly absorbed. Taste and adjust salt/pepper as needed. Keep warm.
Prep Toppings & Tortillas
Chop onion and cilantro
Finely chop 1/2 cup yellow onion and 1/4 cup fresh cilantro. Place each in small bowls for easy assembly.
Prepare guacamole (if making)
If making fresh guacamole: mash 2 ripe avocados with a pinch of salt, a squeeze of lime juice (from the lime wedges), and a tablespoon of finely chopped onion and cilantro. Adjust to desired texture. Otherwise use 1 cup store-bought guacamole.
Assemble Tacos
Place a warm tortilla on a plate. Spoon about 2 to 3 tablespoons (or roughly 1/8 of the cooked meat) of the seasoned protein in the center.
Top each taco with a pinch of chopped onion (about 1 tablespoon), a pinch of chopped cilantro (about 1 teaspoon), 1 to 2 tablespoons of salsa, and 1 tablespoon of guacamole.
Add a dollop (about 1 tablespoon) of sour cream and a sprinkle of shredded cheese if using.
Garnish with a lime wedge and optional pickled jalapeños or hot sauce to taste. Serve immediately while tortillas are warm.
