Method
Prepare meat (if not pre-cooked)
Season and warm meat
If your chosen meat is already cooked (rotisserie chicken, steak strips, or ground beef), place 2 cups in a skillet over medium heat. Add 1 teaspoon taco seasoning and 2 tablespoons water, stir, and cook 2–3 minutes until warmed and seasoning is evenly distributed. If your meat is raw, cook fully first: for ground beef, brown 1/2 lb in a skillet until no pink remains, drain excess fat, then add seasoning and water; for chicken or steak, cook until internal temperature reaches safe level, then shred or slice and season.
Assemble and cook quesadillas
Assemble one quesadilla
Place one flour tortilla on a flat surface. Sprinkle about 1/2 cup shredded cheese evenly over half of the tortilla. Top the cheese with about 1/2 cup of the warmed seasoned meat (spread evenly), and any optional add-ins (1–2 tablespoons diced onion, bell pepper, or a few tablespoons black beans if using). Sprinkle another 1/4 cup cheese on top of the meat to help the quesadilla seal. Fold the other half of the tortilla over to form a half-moon.
Cook quesadilla
Transfer the assembled quesadilla to the hot skillet. Cook 2–3 minutes until the bottom is golden brown and the cheese begins to melt. Add a little more butter/oil around the edge if desired. Carefully flip with a spatula and cook another 1.5–2 minutes until the second side is golden and the cheese is fully melted. Press lightly with the spatula while cooking to help the layers stick together and promote even heating.
Repeat
Remove the cooked quesadilla to a cutting board and keep warm tented with foil. Repeat assembly and cooking with the remaining tortillas, cheese, and meat (use about 1 teaspoon butter/oil per quesadilla).
Rest and slice
Let each quesadilla rest 1 minute after cooking so the cheese sets slightly. Using a sharp knife or pizza cutter, slice each into 3–4 wedges.
Serve
Plate the quesadilla wedges. Serve with 1/4 cup guacamole and 1/4 cup sour cream per serving (adjust to taste). Add pickled or fresh jalapeño and a sprinkle of chopped cilantro. Offer lime wedges on the side for squeezing over the quesadilla.
