Brew
Measure beans
Measure 28 g (0.0625 lbs) of whole coffee beans. This yields approximately a 1:17 coffee-to-water ratio for 12 oz (350 ml) of brewed coffee.
Heat water
Heat 12 oz (350 ml) of filtered water to 200°F (93°C). If you don’t have a thermometer, bring to a boil and let sit 30 seconds.
Grind beans
Grind the beans to a medium-coarse grind (similar to sea salt) for pour-over or drip brewer. If using a French press, grind coarser; if using espresso machine, grind much finer and adjust dose.
Pre-wet filter and preheat
Place filter in your pour-over dripper or basket. Pour 2 oz (60 ml) of hot water through the filter to rinse and warm the brewer and cup. Discard rinse water.
Bloom
Add the ground coffee to the filter. Start a timer and pour 2.5 oz (75 ml) of hot water evenly over the grounds to saturate them. Let bloom for 30–45 seconds to release CO2.
Continue pouring
After the bloom, pour the remaining hot water in slow, steady concentric circles, avoiding pouring directly on the filter. Finish pouring by 2:30–3:00 minutes total brew time for a pour-over. For drip machines, start the machine after adding grounds and water. For French press, pour all water, stir gently, steep 4 minutes, then press.
Serve
When brewing is complete, remove the dripper or decant the brewed coffee into a cup. Serve immediately for best aroma and flavor.
Optional Add-ins & Finishing
Add milk or cream
If desired, add 2 oz milk or 1 tbsp heavy cream to the brewed coffee. Warm milk slightly before adding if you prefer it hot.
Sweeten and spice
Stir in 1 tsp sugar or sweetener to taste. Optionally sprinkle 1/8 tsp ground cinnamon on top or mix into the cup.
