Toss the dried potato sticks with cornstarch until lightly coated. This helps crisping.

Heat vegetable oil in a heavy-bottomed pot or deep fryer to 325°F (160°C). Fry potatoes in batches for 3–5 minutes until soft but not browned. Remove to a paper towel–lined tray and let rest 5 minutes.

If using frozen fries: follow package instructions for oven or deep-fry and season with salt, paprika and garlic powder after cooking.
Taco (soft-corn)

Heat a large skillet over medium-high heat. Add ground beef and cook, breaking up with a spoon, until browned, about 6–8 minutes. Drain excess fat if needed.

Reduce heat to medium, add taco seasoning and 1/4 cup water. Stir and simmer until liquid reduces and meat is coated, 2–3 minutes. Taste and adjust salt if needed.

Warm corn tortillas: heat a separate dry skillet over medium-high. Lightly brush each tortilla with a little vegetable oil and warm 20–30 seconds per side until pliable and slightly charred. Keep wrapped in a clean towel to stay warm.

Assemble tacos: place about 2–3 tablespoons seasoned meat on each tortilla, top with shredded lettuce, diced tomato, shredded cheese, a squeeze of lime and optional pickled jalapeños.
Quesadilla

Prepare filling: in a bowl combine shredded Monterey Jack, shredded cheddar, cooked shredded chicken (or use some reserved seasoned ground beef), diced onion, diced red bell pepper, chopped cilantro, salt and black pepper. Mix until evenly distributed.

Heat a large nonstick skillet or griddle over medium heat and add 1/2 tablespoon oil or butter.

Place one flour tortilla in the skillet. Sprinkle about 3/4 cup of the cheese/filling mixture evenly over the tortilla, leaving a 1/2" edge. Top with a second tortilla and press gently.

Cook 2–3 minutes until the bottom tortilla is golden brown and cheese begins to melt. Carefully flip the quesadilla (use a large spatula) and cook another 2 minutes until golden and cheese is fully melted.

Transfer to a cutting board and let rest 1 minute, then cut into 4 wedges. Repeat with remaining tortillas and filling.
Sauces & Plating

Arrange 2 quesadilla wedges, 2 tacos and a generous portion of fries on each plate (recipe makes approximately 2 full servings).

Serve sour cream and salsa in small ramekins. Garnish with extra cilantro and lime wedges on the side. Offer pickled jalapeños for heat.

Optional: For a composed plate, drizzle a little salsa over fries or place a lime wedge alongside tacos for squeezing.
