Method
Passionfruit Gin Base
Muddle and Combine
In a mixing glass or cocktail shaker, add the passionfruit pulp and simple syrup. Use a muddler or back of a spoon to press the pulp for about 10–15 seconds to release juices and aromatic oils.
Add Non-alcoholic Gin and Lemon
Add the non-alcoholic gin and fresh lemon juice to the muddled passionfruit. Stir or gently shake for 8–10 seconds to combine and slightly chill the mixture.
Mint & Dragon (garnish and aromatics)
Lightly Bruise the Mint
Pinch and slap 4 of the mint leaves between your palms once to awaken their aroma; add them to the mixing glass and gently stir once more (do not over-muddle or you'll get bitterness). Reserve the remaining mint for garnish.
Prepare Garnishes
Thread the edible flower or candied dragonfruit (if using) onto a cocktail pick. Cut the lemon wheel and set aside.
