Brunch Potatoes

Parboil potatoes

Place potatoes in a small pot and cover with cold salted water. Bring to a simmer and cook 8-10 minutes until just tender when pierced with a fork. Drain and let sit to steam-dry for 2 minutes.

Crisp potatoes

Heat 1 tablespoon olive oil in a 10-inch nonstick or cast-iron skillet over medium-high heat. Add parboiled potatoes in a single layer and let brown undisturbed 3-4 minutes. Stir and continue to cook 3-4 minutes until evenly golden. Add diced onion and red pepper; cook 3 minutes until softened. Stir in minced garlic, smoked paprika, dried thyme, 1/2 tsp salt and 1/4 tsp pepper; cook 1 more minute. Transfer potatoes to a warm plate and keep warm.

Cook meats

While potatoes cook, heat a separate large skillet over medium heat and add 1 teaspoon neutral oil. Add beef sausage links and cook 6-8 minutes, turning occasionally, until browned and cooked through. Remove to a plate and lower heat slightly. Add bacon (or turkey bacon if substituting) in a single layer and cook 3-5 minutes per side until crisp to your liking. Transfer bacon to a paper-towel-lined plate.

Cook eggs (your style)

Wipe the skillet lightly and return to medium-low. Add 1 tablespoon butter. Crack 3 eggs into the skillet and cook to desired doneness: sunny-side up (cover skillet for 2 minutes), over-easy (cook ~2 minutes then flip 20–30 seconds), or scrambled (beat eggs with 1/2 tsp salt and 1/8 tsp pepper and pour into pan, stirring gently until set). Season eggs with remaining salt and pepper. Keep eggs warm.

Grill tomatoes & prep avocado

While eggs finish, heat a small nonstick or grill pan over medium-high. Brush tomato halves with 1/2 tsp extra virgin olive oil and season lightly with salt and pepper. Place cut side down and grill 2-3 minutes until charred and warmed. Halve and peel the avocado; slice or mash with 1/2 tsp lemon juice and a pinch of salt. Toast sourdough slices until golden and spread with butter if desired.

Assemble Riki Bobby House Breakyy

On each plate arrange a portion of brunch potatoes, place beef sausage and 2–3 bacon slices beside them, add grilled tomato half, and the eggs. Add the avocado (slices or a scoop of mashed) and two slices of sourdough on the side. Garnish with microgreens or chopped parsley and an extra crack of black pepper. If using turkey bacon as the +2 substitution, replace streaky bacon with turkey bacon and note the adjustment on the order.
